Quinoa Recipe
(As emailed in response to an inquiry from a co-worker):
I buy the quinoa by the box at Trader Joe's and just follow the
directions on it for preparing it. (Boil water in pot, add quinoa, stir
for ~15 min.)
Then I dice onion, garlic, and whatever other veggies I may have in
fridge:
~1/2-1 onion
~1/2-1 full garlic clove
I usually add this about half-way through.
The secret ingredient for this particular recipe is the Trader Joe Thai
Sauce. About half a bottle for a full box.
You can also add seasoning salt, peppers, mint, toasted almond slivers,
whatever suits your taste.
I like it because it's easy, flexible, and very healthy. Put leftovers
in fridge and you can eat cold or heat up in the microwave.
